Valentines Day has to be for two only!

Valentines Day is almost here and its our first V-day together..


Well technically last year Mr. Everything flew to Sydney on V-day eve while I was staying back in India waiting for my visa to come in. So this time around, we are looking forward to a quiet evening at home watching the India vs Australia cricket match. 


I decided I'l do something special for V-day eve - maybe make a fancy cake or heart shaped cookies etc. The internet has truck loads of V-day inspired goodies / cakes. Since I always bake cakes, for a change  I decided to bake cup cakes. But then the age old problem was that I always ended up eating most of the left over cup cakes simply because there were too many. As a result,  I end up baking only when we have guests or on special occasions . I almost dropped the idea this time too, but that's when I started pondering about  making just 2 cup cakes - regular plain cup cake, low fat, non guilty cup cakes - no frills attached. This way when we are longing for something sweet, we can afford to make this knowing that we won't over eat !! 




Its really easy - and serves just 2 people - perfect for V-day or a day when you just feel like eating a cup cake each. This is a basic recipe and I've tried to make it as less fattening & simple as I could. Its definitely not the best cup cake, but it sure is healthy!


Egg White         -    1
Brown Sugar     -    2 Tbs
Olive Oil            -    2 Tbs 
Vanilla Essence  -    1/2 tsp
Flour                 -     1/4 cup
Baking Powder  -     1/2 tsp
Fruit Juice/Milk          -     1 1/2 Tbs ( I dint have milk & hence used fruit juice)


Preheat oven to 180 C. Line cupcake pan with paper liners.
Whisk the egg white in a bowl. Add sugar and whisk till they are combined. ( I used a kitchen whisk-its not worth taking out the egg beater for this! After all, this is supposed to be an easy recipe). Stir in the vanilla essence and olive oil. Now add the flour along with the baking powder. Add the fruit juice/milk and stir until smooth.


Divide the batter equally into 2 cup cake liners and bake for 12-15 mins, until it is done.




Once the cup cakes are cooled,  frost with your favorite frosting or serve plain. I used a basic creamy chocolate frosting here and decorated with  boy & gal figurines that I made from some left over marzipan from Christmas. As you can see, this was my first play time with marzipan for models and hence the crude boy & gal  - but hey, this will do for my V-day this year!!
